The quintessential Banana Bread Recipe (Eggless as always)

Eggless Banana Bread Recipe


Yield - 540 g bread loaf, 11 Slices (46 g each)
Baking Time - 40 Min, Prep Time - 30 Min
Total Time - 1 Hr 10 Min

Baking Dish - 

8 inches(200 cm) by 4 inches(100 cm) by 3 inches(75 cm) high Loaf Pan

Ingredients -

Wet Ingredients

  1. Banana - 2 Pc (Wt: 125 g each)
  2. Butter - 43 g
  3. Flax Egg - 2 (2 tbsp ground flaxseed mixed with 6 tbsp water)
  4. Yogurt - 85 g
  5. Vanilla Extract - 1 tsp

Dry Ingredients

  1. All-Purpose Flour - 150 g
  2. Baking Soda - 1 tsp
  3. Baking Powder - ½ tsp
  4. Caster Sugar - 70 g
  5. Salt - ½ tsp

How to make -

Step 1 - Put two bananas(Pre-bake weight - 250 gms) in the oven (Temp: 150 ℃) until completely ripen (Time - 10 Min). The skin will turn black when ripen.

Step 2 - Line the loaf pan with parchment paper. Melt the butter in a microwave.

Step 3 - In a large bowl, peel + mash the bananas and add melted butter. Add flax egg, yogurt, and the vanilla too to this mix. Mix thoroughly with a silicone spatula. We are now ready with our wet ingredients.

Step 4 - In a separate bowl, combine the flour, baking soda, baking powder, caster sugar, salt together. These are our dry ingredients.

Step 5 - Sieve the dry ingredients into the wet ingredients.

Step 6 - Fold the dry ingredients into wet ingredients. Do not over mix.

Step 7 - Pour the batter into the lined loaf pan filled till 2/3rd of the height i.e 2 inches.

Step 8 - Bake the dish inside the pre-heated oven(170℃) for 40 Min, or until a knife inserted in the center comes out clean.

Step 9 - Let it cool for 20 Min before slicing it.

I have tried this recipe to the exact toe three times before I could muster the courage to post this here. So that you guys need not look anywhere else and have the perfect baking time.

Once you would have tried this recipe, I am sure you will stop buying artisan bread from the market. This recipe is also infinitely customizable. Add chocolate chunks, peanut butter or Nutella to it and it will work beautifully.
