Peanut Butter Swirl Brownie *Delicious Recipe Alert*

At the risk of repeating myself, who doesn't love a good brownie? Well, not me.

I'm a sucker for brownies and especially the pretty looking ones like these!

Peanut Butter Brownies Dohful

Yield - 9 Brownies (~ 95 g each)
Baking Time - 40 Min, Prep Time - 30 Min
Total Time - 1 Hr 10 Min

Baking dish - 8x8 inch square baking pan

Ingredients

For the Brownie
  • Butter - 105 g
  • Dark Chocolate (50%) - 75 g
  • Caster Sugar - 105 g
  • Brown Sugar - 45 g
  • Milkmaid - 110 g
  • Flax egg - 3 (3 tbsp Flaxseed powder + 9 tbsp Water)
  • Flour - 120 g
  • Unsweetened Cocoa Powder - 60 g
  • Baking soda - 1 tsp
For the Peanut Butter Swirl
  • Melted Butter - 42 g
  • Peanut Butter - 125 g
  • Caster Sugar - 65 g
  • Vanilla Extract - 1/2 tsp 

Method

Step 1: Melt the Butter (105 g) and the Chocolate (75 g) in a in a bain-marie or microwave (for about 45 secs). Preheat the oven to 175℃.

Step 2: Prepare flax-eggs by adding 3 tablespoons flaxseed powder with 9 tablespoon water and set it aside for 10 mins.

Step 3: In a separate bowl prepare the peanut butter swirl topping by combining all the ingredients - peanut butter (125 g), butter (42 g), caster sugar (65 g) and vanilla extract (1/2 tsp) together till everything is homogeneous. Keep it aside.

Step 4: Add both sugars to the flax eggs and whisk them thoroughly with a hand whisk for about a minute.

Step 5: Add milkmaid (110 g) and the chocolate + butter mixture. Whisk again for about a minute till all the wet ingredients are well combined.

Step 6: Sift together the dry ingredients i.e. flour (120 g), cocoa powder (60 g) and baking soda (1 tsp) into the wet ingredients mixture.

Step 7: Gently fold everything together till you get a homogenous mixture and no streaks of flour or cocoa powder are seen. Do not over mix.

Step 8: Pour the batter into the lined baking tin.

Step 9: Take the peanut butter topping mixture by spoon-full and put it on top of the brownie mixture randomly or if you have an OCD then in any particular pattern of your choice! With the help of a toothpick or the back of a spoon create a swirly pattern mixing the two a bit.

Step 10: Bake at 175℃ for about 40 mins or till the skewer inserted comes out almost clean. Almost.
